Assemblage :

Solera with the "L'Atavique" since 2010
50% "L'Atavique" 2014 and 50% "L'Atavique" 2013/2012/2011/2010
60% Pinot Noir, 40% Chardonnay
100% vinified in oak barrels 

Vinification:

Natural alcoholic fermentation (natural yeasts)
Malolactic fermentation to limit the addition of sulphur 
No filtration, no collage
Aged on fine or coarse lees for 6 months in barrels
Aged on racks in our cellars: 56 months on average

Dosage: 

Brut 0: 0 gr/litre
Aged in our cellars after disgorgement: 6 months on average

Available in bottles (75 cl)
