Atavique (Atavistic):  Atavism: recurrence in the descendant of one or several characteristics typical to one of its ancestors.

Terroir: 

100% Verzy Grand Cru, Grande Montagne de Reims

Blend:

75% Harvest 2014 and 25% Harvest 2013-2012
70% Pinot Noir, 30% Chardonnay
25% vinified in oak barrels and 75% in small vats

Vinification:

Natural alcoholic fermentation (natural yeasts)
Malolactic fermentation to limit the addition of sulphur 
No flitration, no collage
Aged on fine or coarse lees for 6 months in barrels or vats
Aged on racks in our cellars: 32 months on average

Dosage: 

Extra Brut: 2 gr/litre
Aged in our cellars after disgorgement: 6 months on average

Available in bottles (75 cl)
